The turning of the first furrow heralded a revolution on the land. With farming came a new way of life for the Plants and animals that took to the fields and hedgerows fashioned from the forest.
The crops sown by those first farmers battled with wild flowers that bloomed on the bare soil - cornflowers, corncockles and poppies brought colour to the open land. As the crops ripened, harvest mice and partridges raised their young in the jungle of corn stalks, and beneath the fertile soil moles pursued earthworms and sexton beetles performed last rights on the dead.
The speed of today's agriculture has outpaced many traditional inhabitants of farmlands; only supreme opportunists such as the rook and the fox survive the relentless cycle of the plough. Music by EDWARD WILLIAMS Produced by PAUL REDDISH

The Chinese insist that their fish and seafood should be supremely fresh. In Hong Kong it is even possible to buy it live, as Ken Hom finds when he visits the fascinating fishing village of Lau Fau Shan in the New Territories of Hong Kong. He shows how to make his favourite fish dish - the simple, yet elegant, steamed fish with garlic, spring onions and ginger, and an appetising thick soup, sweetcorn soup with crabmeat. He also prepares shredded chicken with sesame seeds which is his version of a fragrant dish from western China popularly known there as 'strange-taste chicken'. (R) (e)
